This course is the synthesis product of years of teaching General Microbiology, Food Microbiology, Microbial Biochemistry, and Microbial Genetics. It is intended to support and develop the knowledge of Bachelor's and Master's students in Biological Sciences, particularly those specializing in Microbiology.
Furthermore, this document may assist students in Food Science and Veterinary Science to familiarize themselves with the subject of Food Microbiology. As with all works, it may be subject to errors and omissions. Consequently, it is always encouraging and motivating to receive advice and recommendations from colleagues, teachers, and researchers active in the field.

Biochemistry is the scientific field that studies the chemical components and processes within living organisms. In other words, doing biochemistry means exploring life at the molecular level to understand its structures and mechanisms, from the simplest to the most complex.
Biochemical engineering is a dynamic discipline that builds on biological processes and chemical engineering principles, skillfully blending theory and practice to develop innovative solutions.
A solid understanding of these mechanisms requires a combination of theoretical, practical, and guided learning to gain meaningful insight into the structural aspects of biological molecules.


Le génie enzymatique est l'étude et la modification des enzymes pour améliorer leurs propriétés et leurs applications industrielles. Grâce à des techniques comme la biotechnologie et l'ingénierie moléculaire, les scientifiques peuvent optimiser la spécificité, la stabilité et la performance des enzymes. Ces enzymes modifiées jouent un rôle crucial dans divers secteurs, tels que la production alimentaire, la médecine et la bioénergie.
